Lemon Poppy Seed Muffins
These muffins are absolutely AMAZING! As I told my husband, they taste just like a lemon doughnut. You are going to love them too. I added chia seeds, which gave them a little crunch. You could experiment around with this recipe for sure. Add blueberries, bananas, orange juice or anything else you think would be tasty!
Let me know your thoughts on these!
1/4th cup Coconut Flour
1/4th tsp Sea Salt
1/4th tsp Baking Soda
3 Eggs
1/4th cup Raw Honey
1/4th cup Coconut Oil
1 tbsp Lemon Zest
1 tbsp Poppy Seed
*2 tsp Chia Seeds - Optional
Mix all ingredients together. Pour 1-2 tbsp in each muffin cup (non bleached, parchment paper is best) and cook for 10-12 minutes on 350.
Make sure to read my page about what products to use and not use. No two things are alike, if you care about your health I would highly recommend you taking a second to read up :)
p.s. These muffins were so good, I may have hoarded some in our room for a couple nights. No judging until you make them!
Chicken and Broccoli Casserole
This is one of my favorites! Of course us southern women love some well seasoned casserole, this is a super quick version of the no-so-healthy chicken casserole many of us used to make. Ditch the canned cream of chicken and go fresh and healthy. You can also bake this recipe, but usually I'm in too big of a hurry for all that mess. Hope you love it as much as I do!
2 lbs. Free Range chicken
¾ th cup raw sour cream
2 tbsp raw butter - yes butter, you heard me! Raw butter is GOOD for you!
2 cups Broccoli (cut into bite size pieces)
¼ tsp basil
¼ tsp dill
¼ tsp poppy seeds
Cut chicken into bite size pieces, cook on medium heat until about half done. Add dill, poppy seeds and basil. Cook 3 more minutes, add in broccoli.
After broccoli has heated for about 3-5 minutes add in sour cream and butter. Heat thoroughly, and serve.
Cauliflower Pizza Crust
I have worked hard, very hard to get this recipe perfect. The more cheese you add and longer you cook it, the crispier it will be! You really can't tell you are eating cauliflower, I think you will be amazed!
Try it and let me know how yours turns out!
2 eggs (or less)
1 head Cauliflower
1 cup or more shredded raw cheese
1 tsp Garlic
1 tsp Oregano
2 tsp Basil
*Add any other spices you think would taste good in this!
Steam cauliflower until its pretty tender - not mushy though. Make sure it cools so it won't get wet and mushy will working with everything.
Add in all the other ingredients and mix well. Get your hand dirty with this one!
Spread it out on parchment paper that is placed on top of a cooking stone or baking sheet. Cook on 400 for 15-20 minutes. After crust is done, top with all your pizza toppings and bake for an additional 10 minutes.
