Raw Key Lime Pie
This is absolutely the BEST dessert I have made, EVER! One great thing about it is that it is completely raw! You only need a few ingredients and follow a few steps and in no time you will have your own Key Lime Pie!
Prep work:
For our crust I decided to use pecans. One important thing with pecans is that you MUST soak them and then dry them before eating. This basically helps your body actually absorb and get all the nutrients from them.
Soak them over night in a glass jar making sure they are completely submerged in water. Then you will need to dry them. You can do this in the sunlight or in the oven on low for a few hours.

Now, on to the main dish. If you have a sweet tooth or have more than 2 people in your family who may love this, I would highly recommend that you double or triple this recipe! :)
Crust:
1.5 cups pecans
2 tbsp raw honey
1 tbsp water
1/4 tsp cinnamon
1/4 tsp sea salt
Mix all ingredients and fill the bottom of glass pie dish. With all the honey it should all stick together.
Filling:
1/4 cup lime or lemon juice
1 ripe avocado
2 tbsp raw honey
1/2 cup of cream from coconut milk or raw yogurt (if using canned, stick in the fridge for a couple hours and it will be on the top)
Mix together and spread on top of crust. Chill for at least an hour.
Primal Pumpkin Bites
This past week our local farmer friends, Todd and Kari, gave us a pumpkin. Which was wonderful...of them! But, now I had to figure out what to bake with this beautiful orange treat. With some advice from his wife, I went simple. I decided to cut it up in small pieces and just fry it up in some coconut oil.
To our surprise, it was absolutely AMAZING!! We added a little sea salt at the end to spice it up, but plain would have been just as tasty.
Here is a picture of how it turned out! Oh... it's not orange, another big surprise! :)
Make sure to check out this video of Kari as she discusses how to cut a pumpkin. This is the wonderful family who gave us our first pumpkin to cook! Such an amazing family, we are blessed to know them!
